Alexander Hatton, only my most favorite little man, turned a whole 7 on Saturday!
Most kids his age would ask for every sugar packed junk food they could dream up on their special day, but Alex asked for mom’s zucchini cake {this may have something to do with the fact that he maintains his own veggie garden in the front yard}
This zucchini cake is so delicious though, I could see why he asked for it! Mom found a recipe on Pinterest and adapted it to create pure deliciousness.

Ingredients:

1 cup whole wheat flour

1 cup all-purpose flour

2 tsp. baking powder

1/2 tsp. baking soda

3/4 tsp. salt

1 tbsp. ground cinnamon

1/2 tsp. ground nutmeg

1/2 tsp. ground ginger

1 cup granulated sugar

3/4 cup packed light brown sugar

1/3 cup vegetable or canola oil

1/3 cup applesauce
-
2 large eggs
-
2 1/2tsp. vanilla extract

1/3 cup low-fat Greek yoghurt
-
2 1/2 cups grated zucchini
Directions:

Preheat oven to 350.Wisk flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger for 30 seconds in a mixing bowl, set aside. In a separate bowl, stir together granulated sugar, brown sugar, oil, and applesauce until well blended. Mix in eggs and vanilla, then blend in Greek yoghurt. Stir in grated zucchini. Add flour mixture and stir until combined. Pour mixture into buttered 13 by 9 baking dish. Bake 30-35 minutes.
Top with cream cheese frosting!
